I know vacation is long over, (whimper, sniff, whimper) but I wanted to share the dinner we made one night while down south!
We headed to the fish & produce market, got tomatoes, zucchini, squash, shrimp and some white fish. Then we also stopped to get some take-out hush puppies to round out all that healthily stuff! : )

We just sauteed the zucccini and squash. The shrimp we just boiled and made into a little shrimp cocktail app. They were really good shrimp, they actually tasted like shrimp (unlike the ones I get frozen at Costco!)

Speed Chopping!

We experimented with the fish. In foil packets we layered the tomatoes down, then the fish, then spread on top a mixtures of olive oil, fresh lemon juice, garlic, shallots, fresh thyme, lemon slices, capers, salt and and pepper. Then we wrapped up the foil packets and popped them in the oven.

It came out good, not great. Some bites were packed with flavor and very yummy but others tasted like nothing. haha I guess next time the key is to pick a less bland fish. But overall I liked it and might start making it at home when I am dieting, I'll just go light on the olive oil and skip the hush puppies. : )

Erin did a little something different with hers and made a citrus fish packet. That might be something to try at home too!

Oh we also had an uninvited guest after dinner. Don't worry, he was outside not inside!
