I am constantly ripping recipes out of magazines and then I never make them. So I invited Kerri and Katie over to finally give one a try! We learned how to make a chicken potpie! It was very good (but I am assuming very naughty considering we used almost 3 sticks of butter!) The recipe is below, with some notes of things we changed. I think this would make a great SNOW DAY meal! Something warm and yummy on a cold snowy snowday! : )

-We didn't put in mushrooms and added potatoes instead.
-It called for boiling a whole chicken for 45 min. We went with boiling cutlets for 15 instead! So much easier. And I added a small can of broth in with the water. why not?
-I also added Rosemary to both the chicken mix and the biscuit mix since I had some growing in the kitchen.
-For the biscuits I didn't get parsley (just since it was one more thing to buy) so we added the sage and rosemary to the biscuit mix. (they had "single serving" herb packs at the shoprite which was great since it is 99 cents and then you don't have any extra)
-We also mixed up the order of a few things since we were busy chatting, but it still came out well! haha

The mix has sauteed, boiled and simmered (still learning the difference between all these things! haha) and it is ready for the baking dish!


The biscuits we put aside are now ready to top the mix and then we put it all in the oven!


We had crab dip as an app since it was only 99 cents. Not sure if 99 cent crab dip is a good thing or a bad thing!
(Please note my pretty new mini bowls from Anthropologie -I know I am so bad, but there are so nice!)

Nice job, ladies! How long did this take? Looks yummers - I'm always looking for something to cook on Sunday that will last me through the week.

ReplyDeleteit actually took a while, there are alot of steps. so not quick and easy, but it is tasty! we were chatting the whole time so i am sure it took us longer, but check the top of the reciepe, it gives a time (prep and cook). but it wasn't that expensive so that was nice (provided you already have the baking ingred.) : )

ReplyDeleteThe pot pie looks great, and your large photo's even better!!! Glad it all worked out for you...it does take more time, but I think it's worth it. And don't you love Martha's pretty blue cutting board - I have one too and it makes chopping fun.
